The Very Best Kale Salad

  • 1 bunch kale, destemmed and chopped
  • 1 baguette, curbed
  • handful of pine nuts, toasted
  • 1/2 C dried tomatoes, rehydrated and chopped
  • 1/3 C Parmesan cheese, grated
  • 2 hard boiled eggs, chopped
  • 4 Tbs. olive oil
  • 2 Tbs. red wine vinegar
  • 1 Tbs. mustard
  • juice of 1/2 lemon

Place the kale in a bowl and massage with your fingers to release the juices and break down the cell walls. Add the next 5 ingredients. Whisk the last five ingredients to make a dressing, and toss to coat.
