The Very Best Kale Salad
- 1 bunch kale, destemmed and chopped
- 1 baguette, curbed
- handful of pine nuts, toasted
- 1/2 C dried tomatoes, rehydrated and chopped
- 1/3 C Parmesan cheese, grated
- 2 hard boiled eggs, chopped
- 4 Tbs. olive oil
- 2 Tbs. red wine vinegar
- 1 Tbs. mustard
- juice of 1/2 lemon
Place the kale in a bowl and massage with your fingers to release the juices and break down the cell walls. Add the next 5 ingredients. Whisk the last five ingredients to make a dressing, and toss to coat.
